American Classics

Creamy Macaroni & Cheese:

4 tbsp unsalted butter
2 tbsp flour
1
½ cup half & half
1 cup milk
¼ tsp nutmeg - grated
8 oz American cheese, grated
4 oz cheddar cheese, grated
12 oz elbow macaroni
salt and pepper to taste

In a sauce pan melt the butter and wisk in the flour. Stir for 2 minutes, do not let it brown, then wisk in half & half and milk. Once these are thoroughly incorporated add the american and cheddar cheese. Continue to cook, contantly stirring for 10 minutes, finish with nutmeg and salt and pepper to taste. Toss the sauce with cooked elbow/macaroni noodles.

In a pot of salted boiling water add the elbow noodles. Cook until tender, drain and let cool.
