Cajun Meatloaf: ¼
cup unsalted butter Preheat oven to 375° F. Melt butter in heavy medium skillet over medium-low heat. Add next 7 ingredients and cook until vegetables are tender, stirring frequently, about 10 minutes. Combine meat, egg, breadcrumbs, 1/4 cup ketchup and Worcestershire sauce in medium bowl. Blend in sautéed vegetables. Form mixture into 6 patties. In a heavy skillet, sauté the patties over medium high heat for about ten minutes or until cooked to desired doneness. Top the patties with the remaining ketchup and place them into the oven for five more minutes. Serve with potatoes and green beans. More
