Maple Glazed Butternut Squash: ¼ cup olive
oil Heat oil in heavy large nonstick skillet over medium heat. Add squash; cover and cook until squash is just tender and beginning to color, stirring occasionally, about 12 minutes. Add the maple syrup; toss until squash is glazed. Add the parsley, cheese, salt and pepper. Serve hot. TIP: When the sauce is thick enough, it will coat the back of a spoon. More
